The CUV\u00c9E21 Extra Brut <\/b>\u00a0born from the union of Chardonnay (69%) e Pinot Nero (31%)<\/b>, a blend that best expresses the complexity and elegance of Franciacorta. The grapes come from three vineyards located in the municipalities representing the vocational units of Franciacorta<\/b>, selected for their ability to give the wine balance and finesse.
\nThe vines, with an average age of 20 years<\/b>, are raised according to the systems Guyot, Spurred Cordon and Sylvoz<\/b>, with a planting density of 5,000 plants per hectare<\/b> and a surrender of 65 hl\/ha<\/b>.
\nThe harvest takes place by hand<\/b>, with a careful selection of the grapes and transport in small boxes<\/b>, starting from the second week of August<\/b>. After harvesting, the grapes are subjected to a soft pressing<\/b>, followed by fermentation in steel tanks at a controlled temperature of 16\u00b0C<\/b>.
\nThe base wines, vinified separately according to their origin, are then assembled with mastery<\/b> to create a harmonious and balanced cuv\u00e9e. The refinement takes place on the lees in the bottle for at least 36 months<\/b>, in cellars at a constant temperature of 12-15\u00b0C<\/b>, a long period that gives the wine aromatic depth and great structure.
\nWith an alcohol content of 12.5% vol.<\/b> and a dosage of 3.6 g\/l<\/b>, The CUV\u00c9E21 Brut<\/b>\u00a0It presents itself with a straw yellow color with golden reflections<\/b>, a fine and persistent perlage<\/b> and a taste savoury and enveloping<\/b>.
\nIt releases on the nose hints of bread crust and yeast<\/b>, combined with elegant notes of citrus fruits and dried fruit<\/b> as almond, hazelnut and dried figs<\/b>, which enhance its complexity.
